My Favorite's

Peggy's Famous Sloppy Joe's Enchilada Casserole
1 lbs hamburger Cheese Sauce
1 onion 1 cup sour cream
1/2 TBS Worchester Sauce 1 cup cottage cheese
3/4 cup ketchup 1 small can green chillies
3/4 cup water 2 cups grated cheddar cheese
small by leaf Meat sauce
1/2  tsp curry powder 1 can olives sliced
1/2 tsp salt and pepper 1 TBS instant onion
1 TBS BBQ sauce 16 oz tomatoe sauce
Simmer 2 hours on low heat. 1 lbs browned ground beef
1 tsp garlic salt
Cheesy Ham and Potatoes  
1-2 lbs bag frozen shredded hash browns 1 bag dorito chips- crushed
1/2 cup minced onion Layer crushed chips, meat mixture, 
2 cans cream of celery soup and cheese mixture.
1-8oz cream cheese Bake at 350 for 35 min.
1 1/2 cups cubed ham Good to freeze
1/4 tsp pepper
soften cream cheese and cram together Hamburger Stroganoff
with soup.  Stir in onion, ham, cheese, & 1/2 cup minced onion
pepper.  Break apart hash browns.  1 lb ground beef
Gently stir into cheese mixture.  Place in 2 T flour
gallon freezer bag, label, and freeze. 1 tsp salt
1/4 tsp pepper
Italiano Chicken 1 8oz can mushrooms
4 boneless skinless chicken breast 1 can cream of mushroom soup
1/2 cup italian bread crumbs 1 cup (8oz) sour cream
1/2 cup grated parmesan cheese Add onion and meat and brown.  Add
1/4 cup melted butter flour, salt, pepper, and mushrooms.
mix bread crumbs and cheese.  Dip chicken Cook 5 min. add soup and simmer
in butter and next in bread/cheese mix uncovered 10 min.  Stir in sour cream.
bake 30 min. 375 Heat through and serve with rice or 
noodles.  
Chicken Cacciatora Cashew Chicken
2-3 lbs chicken breast 3 whole chicken breast
2 med onions 1/2 lbs. chinese pea pods
2 cloves garlic, minced 1/2 lbs sliced mushrooms
16 oz tomatoes canned 4 green onions
8 oz tomato sauce 1 can 15oz bamboo shoots
1 tsp salt 1 cup chicken broth
1 tsp crushed oregano 1/4 cup soy sauce
1/2 tsp celery seed 2 Tbs corn starch
1/4 tsp pepper 1/2 tsp salt
1 or 2 bay leaves 1/2 tsp sugar
1/4 cup broth 1/4 cup salad oil
Slowly brown chicken in 1/4 cup olive oil. 5 oz cashews

Ham and Cheese Sauce over biskets Hobo Pie

Swedish Meatballs Italian Pork Roast & Veggies
2 lbs hamburger Pork
1 large onion 2 1bs pork tenerloins
1 cup bread crumbs 2 garlic
1 cup cooked rice 1 tsp olive oil
1/2 cup evaporated milk 1/2 of herb mixture
2 eggs beaten Herb Mixture
1 tsp salt 2 tsp crushed dried rosemary
1/4 tsp. pepper 2 tsp crushed dried oregano
1/2 tsp nutmeg 2 tsp lemon pepper
Mix together and roll in balls.  Roll balls 1 tsp salt
in flour.  Brown in small amount of hot oil. Vegetables
Cover with 1 can cream of mushroom soup 2 lbs potatoes
1 can cream of celery soup and 1 can milk. 1 lg red bell pepper, diced
Pour soup mixture over meatballs and bake 1 large onion, wedged 1/4 inch
at 350 for 30-40 min.  1 TBS olive oil

BBQ  Spare Ribs Place tender loines side by side.  Rub oil, garlic,
2 lbs boneless spare ribs & 1/4 herb mixture on pork.  Toss vegies with oil
1 cup catsup garlic and herb mixture. Put veggies around pork. 
1 can tomatoe sauce  Bake 25-36 min. at 450.  Do not defrost pork in 
1/4 Cup vinegar micorwave- pork becomes tough. 
1/4 tsp salt
1/2 cup sugar Taco seasoning
1 tsp. worchestershire 1 lbs ground beef
pre-cook spare ribs 1 hr with liquid smoke 1 tsp cumin
only at 350, then return with sauce for 2 tsp oregano
1 hour at 300.  1/2 tsp garlic salt
Easy Chicken Bake Pork Loin and Ribs-Jonny Corinno's
Salt  Rosemary
Garlic Garlic
Paprika Fennel seeds 
6 good size pieces of chicken Rub these on the pork loin
1 can cream of mushroom soup Butterfly bork loin and place seasoning
1 cup cream or 3/4 C evaporated milk in center of pork.  Tie together.
Chopped parsley Olive oil on roasting tray
Mix Salt, garlic salt, & paprika.  Rub Poke holes in pork and push seasonings
mixture into chicken pieces.  Spread into holes.  Salt and pepper.
Chicken in one layer in a shallow baking cook at 375 for 30 min. Add sesoned
dish.  Dilute the soup with cream & pour potatoes to side of roast and cook for
over the chicken, sprinkle with parsley.   45 min raise temp to 400 last 10 min.
Bake uncovered at 350 for 1 1/2 hr.  Season potaotoes with dry rub, salt,
 pepper and olive oil.
Chicken Alcapulco
4 boneless, skinless chicken breast Ham and Potato Caserole
2 cans cream of chicken soup 1/2 lbs. diced ham
1 pint sour cream 3-4 potatoes diced
1 small can diced green chilis 1 onion
1 pkg shredded mozzarella cheese 1/2 cup cheddar cheese
1/2 cube butter 1 tsp parsley
Melt butter in pan-cook chicken until done  
Mix soup, sourcream, chilis, & 1/2 cheese White Sauce:
in a large baking dish.  Add cooked meat 3 TBS butter
and butter.  Cover with sauce and cook 1 1/2 cup milk
at 375 until bubbly.  Add remaining cheese flour
 
Joan's BBQ Chicken Layer ham potatoes and onion.  Pour
1 cup oil white sauce over everything. Put cheese
1 cup soy sauce on top.  Cover with foil and bake at
1 TBS horse radish 350 for 30 min. 
1/4 tsp garlic powder uncover and cook for another 30 min.
2 cups 7-up
Marinate overnite-- stir occasionally
Chille Verde Potatoe Kilbasa
2 lbs cubed pork (or chicken) 8 slices bacon
1 lg onion 4 green onions
2 green peppers 1 TBS flour
3 TBS oil 3/4 cup White vinigar
4 cans salsa verde 2 tsp mustard
1 can diced green chilles 1 TBS sugar
cilantro choped  salt to taste
2-4 cups chicken broth 1/4 tsp pepper
salt and pepper  Kilbasa 
  4 potatoes 
Saute peppers and onions in oil.  Add pork 1/4 cup parsley
and stir until lightly browned.  Add broth cook bacon and add flour.  Add onions
salsa verde, chilles, salt and pepper  brown and then add all other ingred.
simmer for about 20 min stiring  Cook until potatoes are done.
occasionally.  Add cilantro and serve over (It does help to par-cook the potatoes)
chips, rice, or bean burritos.
Baked Orange Chicken
Porcupine meatballs 1 egg
1 lbs ground beef 1/3 cup frozen orange juice consentrate
1/2 cup rice thawed (3 oz)
1/2 cup water 2 tsp soy sauce
1/3 cup chopped onion 1 cup fine dry bread crumbs
1 tsp salt 2 tsp basil
1/2 tsp celery salt 1 1/2 tsp salt
1/8 tsp garlic powder 3 lbs chicken cut up
1/8 tsp pepper In lg bowl combine egg, OJ, Soy sauce
2 cans tomato sauce mix well.  In another bowl combine
2 tsp worchestershire sauce bread, basil and salt.  Dip chicken in OJ
Mix meat rice, water, onion, salt, garlic sauce and then in bread crumbs.  Bake
pwder, and pepper.  Shape into balls at 350 for 50-60 min. or until tender.
Stir together tomato sauce and whorch.
Pour over meatballs.  Cover with foil bake
45 min at 350.  Uncover and bake 15 min
longer. 
Ham and chicken roll-up Chicken Casarole
2 cups cooked rice 6 diced chicken breast (boil w/ salt)
6 slices cooked ham 2 2/3 cups diced celery
1 1/2 cup cooked chopped chicken 2 2/3 cups cooked rice
1 can cream of chicken soup, divided 2 cans cream of chicken soup
3 TSP butter 1 lg can evaporated milk
1/4 cup minced onion 2 Tbs lemon juice
1/4 cup minced celery 2 TBS minced onion
2 mushrooms chopped 1 1/2 cup mayo
1/2 C sour cream Topping:
1/4 cup milk 4 cups corn flakes
1/4 tsp pepper 1/2 cup slivered almonds
1 cup shredded swiss chesse 1/2 cup melted margrin
french fried onions  
Arrange rice on bottom of greased foil Beat soup and milk together then add
baking pan.  Saute onion, celery, and  other ingredients place in butter 
mushrooms in butter until soft.  Combine casarole dish.  Cover and put in fridge
chicken, 1/3 cup soup, onion, celeruy and over night.  Take out of fridge 2 hour
mushrooms.  Divide among the 6 slices of  before baking.  300 for 1 hour.

pepper, and remaining soup.  Pour over 4 cups diced chicken
roll-ups.  Cover with heavey freezer foil. Sauce:

To serve: Thaw, bake uncovered for 45 min. 1/2 cup sugar
at 350.  Top with cheese and French fried 1 tbs ginger
onions.  Bake  10 min. longer. 1 1/2 tsp garlic
1/2 tsp chille flakes
Tangy BBQ sandwich boil unitl reduced to about 1/2 org.amnt.
3 C Chopped celery Heat through at 350
1 C Chopped onion
1 C ketchup
1 C BBQ sauce
1 C water
2 Tbs Vinegar
2 Tbs worcestershire sauce
2 T brown sugar
1 tsp chili powder
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1 boneless chuck roast 3-4 lbs.
14-18 hamburger buns
 
Slow cook in crockpot 6-7 hrs.
